Recap: Season 2, Episode 8 - Bolognese

Chef Sydney walks out the kitchen door and into the dining room space. The exterior structure, light fixtures, and paintings are set in place. She wanders around where the tables will be, soaking in what’s about to become reality.

Back at Carmy’s apartment, Claire & Carmy discuss the fire suppression test. Today’s the day, and when we say THE day, we mean THE FINAL day that The Bear can pass the test in order to open in time.

Tina polishes wares alongside the takeout window, and Ebra approaches her. When Tina sees Ebra, she scoffs.

“Not open yet ma’am.”

 

“This used to be a good restaurant here, what happened to it?” Ebra asks as if they were strangers.

“They had to close, some old b!%$@3$ worked here,” Tina says unimpressed with how Ebra ghosted her and the team.

“Maybe some old b!%$@3$ like their b!%$@ ways.”

Tina and Ebra finally giggle; and Ebra ultimately decides to come back and work the takeout window, that would continue to sell menu items from The Beef to former customers. As we say at Chrane, Right Person, Right Seat. That’s Traction, yo!

Inside the dining room, Carmy sips pepto bismol like it’s water while looking around at what’s been done so far. Ritchie opens the front door, wearing a… suit?

“Let me say one thing before you laugh at me… I get it,” Ritchie says. Carmy responds gently, glad to have him back and with a new sense of purpose.

As Carmy goes to open the Walk-in, the handle breaks. He forgot to call the maintenance guy. And this isn't his first slip up in his project to-dos since dating Claire...

The camera cuts to Marcus, who has returned from Copenhagen! With a smile, Marcus surprises Sydney and Carmy with one of his three dessert plates he nailed down when abroad.

Carmy chimes in, “I had this gnarly panic attack last night, and I was telling Claire about this time at Christmas… Anyway, we would always have cannolis after Christmas dinner and so I always hated cannolis because I associated them with my weird f-ed up family and, I don’t know, I was talking to Claire last night and I had this realization that maybe I could kinda take them back. You know, make them my own...”

Marcus nods and adds, “That’s healthy!” He is already envisioning a mortadella mouse, and a parmesan shell dipped in pistachios.

Carmy and Sydney discuss menu once again, except the conversation is one-sided. Carmy has drawn out his vision of the menu, with dishes that Sydney has never seen before. He reiterates, “Chaos menu but thoughtful."

Sydney is at a loss for words, completely defeated and confused on direction.

In the most pivotal moment of Season 2, the "fire suppression man" arrives. The team has 10 days to open, and if they don't pass the test, have to delay, a nightmare for Uncle Kalinowski. 

Everyone lines up in the kitchen. Stuck still.

“Suppression seems to be working. I will now check the gas line.”

The balloon has 10 seconds to fill and pop for them to fail, and their careers and lives quite literally flash before their eyes.

The balloon doesn’t pop, nor does it fill AT ALL.

Neil figured it out.

“Congrats Natalie Berzatto, you have a restaurant!"

In celebration, The Bear team turns on their stove tops and starts to cook their menu. We see flashes of dough, focaccia, steak being seared, prosciutto being sliced, vegetables being seasoned and mixed, and fresh pasta.
